Brooklyn Blackout Cake

You say the name Ebinger to any Brooklynite born before 1965 and a smile a mile wide will spread across their face. Ebinger’s was the bakery in Brooklyn for the better part of the twentieth century, at one point having more than fifty-four locations in the borough—all the more remarkable considering that geographically, Brooklyn really ain’t that big. They closed in 1972, shattering the hearts of millions, but having left us with one of the greatest creations in the American culinary canon—the legendary Brooklyn blackout cake.

When Matt and I decided to make a blackout cupcake, we didn’t want to make just any cupcake. We wanted to make Ebinger’s—a legend that was a household name for almost one hundred years, yet today isn’t even remembered enough to have a Wikipedia entry. We grilled my parents, my aunts, anyone who was lucky enough to remember what blackouts were supposed to taste like, for painstakingly detailed descriptions. Is this an exact replica? Of course it isn’t—this cake hasn’t existed for more than forty years, and no one can remember exactly what it tastes like. Is it good enough that my dad can eat one and say he doesn’t miss Ebinger’s anymore? Yup!
